Roasted Acorn Squash

Recipe by: Jim Beletti – November 2013
(4-8 servings)

Ingredients:

  • 2 Acorn Squash
    (washed, halved and seeded and rounded ends cut so you have a small flat spot so the halves will sit flat)
  • 4 Tablespoons Butter
  • 4 Tablespoons Brown Sugar

Steps:

  1. Preheat oven to 350 degrees F
  2. Turn acorn squash upside down (flat) onto a cookie sheet. Bake in oven until squash begins to soften, approximately 30 to 45 minutes
  3. Remove squash from the oven and turn each halve over so the flesh is facing upwards. Place 1 tablespoon each, butter and brown sugar into each the squash halve
  4. Return squash to oven and bake another 30 minutes until fork tender
